Ce breuvage traditionnel \u00e9tait donc en place, bien avant le Champage, celui-ci fit son apparition vers le 17\u00e8me si\u00e8cle, gr\u00e2ce a Don P\u00e9rignon. Benjamin Barbe, \u00e9paul\u00e9 par son p\u00e8re, suivant les traces de son arri\u00e8re Grand P\u00e8re, a eu envie de donner la quintessence \u00e0 cet ap\u00e9ritif ancestral, en donnant naissance \u00e0 son Tr\u00e8s Vieux Ratafia. S\u00e9lection des meilleurs mo\u00fbts (jus de raisin non ferment\u00e9) aupr\u00e8s de ses partenaires viticulteurs, un mutage (alcool additionn\u00e9 au mo\u00fbt) de qualit\u00e9, puis un vieillissement d\u2019au moins dix ans, avec un affinage en f\u00fbts de ch\u00eane. Ch\u00eane provenant de la r\u00e9gion mis en oeuvre par un tonnelier situ\u00e9 en Champagne. Remplace un vin blanc liquoreux avec bonheur.
